We had our wedding at Domestic in the spring and had an absolutely amazing experience. Highly recommended. First of all, the food was top notch (two of the guests said it was the best meal of their lives). Then, the service also exceeded our wildest expectations - both before the party, where we experienced great flexibility, responsiveness and genuine curiosity. And during the party, where the kitchen and waiters were super sweet, attentive and passionate. Finally, I would like to mention the place and the atmosphere, which is cozy, elegant, and without being pretentious. 5/5!

Locals "celebrate" their hometown. The restaurant, whose former use ranges from a school to a dairy, has held a Michelin star since 2017 and received a green star in 2021. I had reservations. Would I encounter my arch-enemy, a disciple of Redzepi, in Mejlgade, known for its hip and urban ambiance? As soon as I entered the dining room, it was obvious: fermentation takes up a lot of space here, and that's to be taken literally. Everywhere you look, slightly dusty jars of pickles.
Head chef Christoffer Norton greeted us personally. Restaurant manager Breinholt showed us to our table.
The atmosphere is relaxed and informal. The oak tables show signs of wear. Wool blankets and candles are intended to create a cozy atmosphere.
The cutlery and tableware selection was interesting.
Some plates and bowls have been "repaired" using the Japanese art of Kintsugi, in which broken pieces are repaired with lacquer, often decorated with gold, silver, or platinum powder. Other pieces of the tableware are simply "chipped."
The cutlery: Laguiole knives and, for contrast, a spoon that I would have expected to find in a youth hostel stuck in the 1970s. Why not 😊?

The menu's product selection is determined by the seasons. The decision has been made to make regional produce the cornerstone of the cuisine. The menu is an uncompromising homage to local producers. The menu takes you on a taste journey through Denmark. The drinks menu is also Danish. They have created a selection that brings Denmark into the glass. The alternative wine list offers a lot, all at very ambitious prices. A non-alcoholic beverage selection is also available.
I was pleasantly surprised. Although not all of the dishes were convincing in terms of taste, the dishes were characterized by innovation, creativity, and novelty. The food was surprising, controversial, product-focused, clever, and interesting. Umami had a prominent presence on the menu, and who could resist that flavor?
Two asparagus dishes were offered, among others. Both simple in their presentation, yet extremely flavorful. Koji played a key role in the white asparagus. While the green asparagus was accompanied by an excellent XO sauce, which demonstrated great craftsmanship and made the food glow in my stomach.
Shortly afterward, a dish followed that will remain in my memory forever. Once again, a bread dish aroused my great enthusiasm; my love for bread remains undiminished. The potato bread served was characterized by a remarkably intense flavor, which was due to a miso paste that they make themselves. The bread alone made the evening worthwhile.
Mackerel was served next. This fatty, juicy, and quite inexpensive fish delighted with its perfectly grilled skin, which had previously been glazed with a sweet sauce, and was very tasty and cooked to perfection.
The main course offered two variations of the older cow, reminiscent of Txogitxu beef from the Basque Country. The hot dish was presented in a simple manner, with only sauce and some grilled chard, and I thoroughly enjoyed it. The raw version, on the other hand, proved to be extremely rich; the fat from the meat had been incorporated into the sauce – perfectly acceptable. The dessert at the end was nothing. It was a frozen dish of rhubarb with fermented magnolia, the flavor of which was overly perfumed and floral.
My conclusion: I was worried that my visit to Domestic might make me unhappy, but ultimately the experience turned out to be a positive one. Now I can have an opinion on Nordic cuisine because I dared to face it 😁!

Vi fejrede vores 2-års bryllupsdag hos Domestic i går – og wow, hvor er vi glade for, at vi valgte netop dem.
Som én der kommer fra en familie med rødder i madbranchen, havde jeg høje forventninger… og de blev indfriet og mere til. Fra vi trådte ind, til vi gik ud næsten 5 timer senere, blev vi mødt af et team, der var både hjertevarme og dybt passionerede – uanset om det var en kok eller tjener, vi talte med.
Det føltes luksuriøst og afslappet på samme tid: man blev opvartet uden at lægge mærke til det – vand, vin, service – alt gled bare.
Noget af det, der virkelig imponerede os, var deres dedikation til danske råvarer. Alt, der bliver serveret, er fra Danmark – hvilket i sig selv er fantastisk i en tid, hvor meget andet outsources. De arbejder bæredygtigt, tænker over miljøet, sylter, genbruger og bevarer smage, så intet går til spilde.
Maden var generelt helt i top – en enkelt ret ramte ikke helt vores smag, men resten lå mellem 4 og 5 stjerner hele vejen. Smukt, gennemtænkt og velsmagende.
Alt i alt? Domestic er en restaurant med sjæl, kvalitet og kærlighed til faget.
Vi gik derfra både rørte, mætte og glade.

¡Fue absolutamente fabuloso! Nos encantó cada detalle de la fantástica cena proporcionada por Domestic. El personal, por supuesto, era muy amable y acogedor. Estaba celebrando mi cumpleaños, así que mis expectativas eran muy altas para la experiencia. El restaurante los encontró perfectamente. Comenzamos en la terraza con un poco de champán y algunos platos ligeros. Fue encantador disfrutar del sol mientras aprendía sobre la cocina local y escuchar del personal. Más tarde nos trasladamos a la sala principal del restaurante y continuamos comiendo muy bien. Cuando mencioné una alergia con una pieza frita, fueron absolutamente geniales y rápidos en reemplazarla. Debo decir: Tenía las mejores zanahorias de mi vida. En serio: probarlo me llevó a otra parte. Cada plato estaba bien diseñado y maridado con el vino perfecto. Concluimos nuestra cena en la bodega donde tomamos postre y té. Quiero destacar lo amable que fue el personal. Hice una inmensa cantidad de preguntas sobre muchos aspectos diferentes (cultura, comida, vino, historias y experiencias personales de la gente) y cada uno de ellos fue educada y amablemente contestado. Recomiendo vivamente el restaurante y les deseo más y más éxito!

Nice and cozy Nordic decorated restaurant, with a pleasant and relaxed atmosphere.
We had a lovely evening with good food and wine.
However, it must be said that, possibly due to the green "star", they focus a little too much on the full utilization of raw materials. This was especially evident when some of the dishes tasted a bit similar. In our experience, it was especially a lot of fir and juniper, which made us feel as if we had a taste of Christmas decorations in our mouths when we left the restaurant. However, it must also be mentioned, they make many tasty and creative dishes, and fry all the meat to perfection.

Really excellent experience from start to finish. We did the short dinner menu, and it was plenty of food for us. We were driving, so we opted for the "juice" (kombucha) pairing instead of wine. Truthfully, I know what good wine tastes like, and I would say try the kombucha to make it a more unique experience! Food is of course really well done. Everything they served was fresh and local and they explain each dish well. I will say that they didn't serve anything too wild - it was fish fillet, beef, mussels, oysters, and veggies. So nothing that would be too far out of most comfort zones, just prepared in inventive and flavorful ways!

It was our first Michelin starred restaurant experience and will go down as one of our most cherished memory
The attention to detail from plating to drink pairings, while the staff explains to you how, where and why the ingredients were sourced, they almost envisualise for you a journey of the food until it hits your palate.
This is fine dining at its best, and if you want to experience masters of their craft, this is where you go.
My hat tip to the entire staff and chef, keep up the good stuff
