Jeg vil gerne udtrykke min dybeste taknemmelighed og respekt for Michelin-restauranten Sustans, som virkelig tog imod udfordringen med at skabe en 100% glutenfri menu. Som en person med alvorlig glutenintolerance betyder det alverden, at de havde undersøgt alle deres råvarer for spor af gluten og endda indkøbt nye ingredienser, hvor det var nødvendigt. For de retter, hvor det var vanskeligt, leverede de en kreativ og nænsom tilnærmelse, som var tæt på originalen. Personalets omsorg og forståelse var beundringsværdig, og det var tydeligt, at de tog mit behov meget seriøst. Med en smuk udsigt og et skønt personale var hele oplevelsen intet mindre end fantastisk. /Lars

Wonderful restaurant with a beautiful view and delightful food. (We had the small lunch.) We felt very well taken care of well fed here.

Excellent food and friendly and courteous service. To put the icing on the cake, check glasses and plates for integrity before setting them up.

Typisch dänisches Michelin Stern Restaurant mit einem umfangreichen Menu und einer nicht minder umfangreichen Weinkarte. Besonders ist die Lage im 11. Stock im Neubaugebiet Aarhus O mit einem wunderbaren Ausblick. Besonders ist auch das Konzept einer offenen Küche bei der die Speisen im Beisein der Gäste an einer Theke fertig gestellt werden. Dies schränkt allerdings die Möglichkeit verschiedener Kochtechniken ein. Der Salamander kommt relativ häufig zum Einsatz. Durch die große Hitze kommt es schnell zu Verbrennungen an Brot, Gemüse etc. Dies schränkt den Genuss ein.

The restaurant is understated and underrated, hidden in one of those residential buildings. As you step in, you’ll feel at home immediately, with the beautiful Scandinavian style interior. They also had an open kitchen concept, and you could see your food being prepared before your eyes. We paired our meal with the juice pairing and we were pleasantly surprised by the sheer variety of juices that they could come up with. The server managed to explain each dish to us clearly.

location was stunning the eleventh floor overlooking the harbor of Aarhus service and quality of the food was perfect all the dishes that was served was explained in detail along with the wines or beers to accompany each course I would not think twice about going back and recommending this restaurant to all our friends

Fantastic evening at Substance. Thank you for really good food and a nice relaxed atmosphere. The hosts took a lot of time to explain everything we got and extra nice chat. Just a few things that drag it down a bit. Why do you call it a juice menu when it's cold tea? If in the kitchen you want to open the door to the toilets for the guests, you should probably just wash your hands before continuing to prepare the food. When you're wearing a plaster in the kitchen, why don't you wear a disposable glove? However, this was still a lovely evening and a good experience, we would recommend to others...
