Received a call with 2 available seats on the day of our anniversary, how could we say no to that? As we didn't read much on Alchemist beforehand, except that it is a must go restaurant, we were pleasantly surprised by the whole experience. If we are to nitpick, we will say the experience started off stronger, but maybe towards the end, our expectations just got higher. I like it that the final bill payment does not come any awkward attempt of a tip.

Un ristorante stellato? Non solo; uno spettacolo di digital art? Non solo; un luogo ove meditare sul mondo in cui viviamo? Non solo. Alchemist è di più, è unico, è sorprendente. Dall’entrata, dove una imponente porta si apre dopo una voluta attesa, al primo approccio con foto e video in una stanza buia; ancora: la prima sala dell’aperitivo dove si capisce che la qualità del cibo sarà eccezionale, la scelta dei vini imponente, il servizio perfetto. Uno champagne e si sale nell’astronave dov tutta la cena, fatta di decine di meravigliosi assaggi, da vini sconosciuti (da noi scelti) altrettanto meravigliosi, è accompagnata da proiezioni digitali con temi che cambiano continuamente, spiegati ove necessario da eccezionali camerieri (per noi rigorosamente italiani) che dimostrano preparazione, competenza, capacità di relazionarsi con il cliente come mai mi è capitato. Si finisce giocando e disegnando sui muri con la cioccolata e poi in una sala finale, dove su comodi divani si gustano dei dolcetti e un porto eccezionale, con lo chef Rasmus (un vero genio) che familiarizza e si fa fotografare con gli ospiti. Il conto “non conta” per una volta nella vita (e spero anche di più) si può spendere senza pensarci per vivere un’esperienza unica, indimenticabile oltre che per mangiare e bere benissimo.

A starred restaurant? Not only that; a digital art show? Not only that; a place to meditate on the world we live in? Not only that. Alchemist is more, it is unique, it is surprising. From the entrance, where an imposing door opens after a deliberate wait, to the first approach with photos and videos in a dark room; again: the first aperitif room where it is understood that the quality of the food will be exceptional, the choice of wines impressive, the service perfect. A champagne and we go up to the spaceship where the whole dinner, made up of dozens of wonderful tastings, from equally wonderful unknown wines (chosen by us), is accompanied by digital projections with continuously changing themes, explained where necessary by exceptional waiters (for we strictly Italians) who demonstrate preparation, competence, ability to relate to the customer as has never happened to me. We end up playing and drawing on the walls with chocolate and then in a final room, where on comfortable sofas we enjoy sweets and an exceptional port, with chef Rasmus (a true genius) who familiarizes himself and has his photo taken with the guests. The bill "doesn't count" for once in your life (and I hope even more) you can spend it without thinking to live a unique, unforgettable experience as well as to eat and drink very well.

Wow. What can I say, this was an experience that we will never forget in our lives. The staff were fantastic throughout and Rasmus made our experience complete with his kindness, insights and his clear love and passion for what he does. I found this to be the most spectacular dining experience we have ever had and most likely will ever have. the creativity and work behind every single impression was otherworldly. There was not a single dish that we didn't enjoy and find mind-blowing. As instructed, we went in with open minds and have come away with a whole new attitude and perspective towards food and sourcing it. The messages behind the dishes were so powerful and thought-provoking. We tried things we have never tried that we now love, including the lamb brain and the cured rabbit- absolutely spectacular and so tasty. The caviar, lobster and cod cheek were also very memorable and delicious. Thank you again to the team to making our experience dining with you so wonderful 💙

Update: Chef Rasmus and Lykke Metzger ran into my review and reached out within a week. I genuinely did not expect it whatsoever, but Lykke went far, far above and beyond to speak with me directly. She was super apologetic and gracious, and from the short conversation we had, I got a deep sense of the ethos and responsibility that she and Chef Rasmus feel for Alchemist, and it felt like a microcosm of how much they genuinely do care about every diner.
I was honestly a bit emotional about Lykke's level of conscientiousness to reach out for a direct chat, and I'm honored she took time not only to apologize, but also try to understand what had led to my reaction. I was able to share my concerns and recollections around the impressions that could have triggered the allergy, and I felt confident by the end that they would take care to ensure this would never happen again. While it was uncomfortable that night, it was humbling to see how they felt the buck stopped at the top, and unbelievable how they reached out to make things right. Thank you for a great experience there, but even more so for your warmth and understanding months later.
Original review (slightly amended, I feel I was unnecessarily harsh initially as I was a bit overemotional):
It was a unique experience, and my first exposure to ultra fine dining both in general and in Copenhagen. It's best to go in with no preconceived notions and really lean into the theater and spectacle of it all. It's a dinner like none other and a singular dining memory.
The presentation and scope of the impressions was very maximalist, which some of my party felt was somewhat unfocused and not quite cohesive, but I think it was appropriate for the overall feeling and encounter. The pairing generally was quite good with the dishes, and every one was very enjoyable.
Our hosts were deeply knowledgeable: if you want to know more about the ingredients, concept, and execution of the dishes, they seemed to know absolutely everything. Wonderful service and I have no doubt each and every person could give a TED talk if we wanted to ask them, yet they were also absolutely approachable and attentive.
That being said, there were several dishes that triggered my allergies, most likely dairy protein, and by the end of the night my lips had swelled almost comically, and my throat was really uncomfortable. The staff assured me that every precaution had been undertaken, and they were very apologetic about it, but said there was absolutely no chance of contamination. I took another allergen blood test afterward which confirmed that all of my allergies were still identical to what I knew (and which I had informed the kitchen beforehand).
As a result, I unfortunately just cannot give it a full rating. I also had the wonderful opportunity to dine at Jatak, Alouette, Kadeau, and miscellaneous other restaurants while in Copenhagen, and this was the only place at which I experienced multiple serious allergic reactions. The other restaurants also did substitutions, e.g. non-dairy chocolate, but I didn't have any allergic reactions whatsoever at the other establishments. My only conclusion is that there must be some level of contamination, there is mislabeling by a supplier, or there is a misunderstanding (it was unclear but it seemed like there might have been misinterpretation of milk protein allergy vs lactose-free).
The staff was really gracious, but I felt a bit taken aback since they were adamant there were no issues; I understand the trust in the kitchen, but as a diner, the experience left me seriously uncomfortable for several days and a bit traumatized on fine dining (thankfully by the end of my trip my faith had been restored). I'm not a confrontational person, so it pained me even to bring anything up. It was really surprisingly to me as I'd been saving up all year for this trip, and the swollen mouth/throat marred my memory. Just thought I'd share for anybody else with significant allergies, I debated writing anything for a while but thought I'd be remiss not to say something.

Alchemist is one of the most unique restaurants in the history of Michelin restaurants in the world. It was founded by chef Rasmus Munk in 2015. In 2016, Lars Seier Christensen (co-founded Saxo Bank, resigned in 2016), an investor of the three-Michelin restaurant Geranium in Copenhagen, approached Rasmus Munk, hoping to take the restaurant "Alchemist" to a new level and decided to create an unprecedented restaurant experience. Alchemist 2.0 opened on July 4, 2019. In just a few years, this two-Michelin-star restaurant led by chef Rasmus Munk was ranked 18 (2022), 5 (2023), and 8 (2024) on the Best 50 list, and was called the most immersive restaurant ever.
