I am amused by the horrified reviews from people who apparently didn't know what they were getting into until beforehand. I mean, the place screams 80s, time warp and old routines. I can easily talk about sourdough pastries from Andersen, Juno, Alice and Hart in Copenhagen, but none of them offer what Thorsen offers; a bit of the old days. The bread should preferably be weighed on a gram scale, smeared with Kærgården butter or 3-star salami and slathered in the corner of the mouth. And the dear baker Thorsen is based on those parameters.
When reviewers write about 'Denmark's worst baker', it is because baker Thorsen is probably the last one left of his kind. When Thorsen turns the key, it is a farewell to a simpler time, where everything does not have to be measured and weighed and accounted for.
