One of the most different food experiences I've had – Ferment is something very special – and I learned a lot along the way
Ferment is not just a restaurant – it's an experience. You can feel it when you walk in and are greeted by Peter, the owner of the place. He is an honest, listening and creative enthusiast who has clearly dedicated his life to food and especially to his very own experimental Asian fusion cuisine. And it works.
I have never tasted ramen like the one I had here. The broth has been cooking and developing for over 10 years (!), and you can taste it – it is deep, intense and full of umami. Perhaps the best "non-ramen" I have ever had.
The tuna was a wild experience – soft and creamy inside, but at the same time with a crispy layer that gave just the right contrast. And all the fish dishes were right on target. Every bite had depth and surprised in a good way.
This is not a place where you get a classic sushi plate and go home. It's a play with taste, texture and fermentation. So if you are curious about food and dare to try something new – then you MUST go to Ferment. It's not for everyone, but it is for those who dare.
And then there is Peter. He IS the place. His presence, joy, love and energy spread throughout the room and are reflected in both the atmosphere and the food. You feel really welcome – and you can feel that soul is put into every single detail.
I will definitely come again – and recommend Ferment with great love.❤️

We had an amazing experience dining with Peter. The concept is very unique and the place and the food are full of personality. Each meal is super interesting and make sure to have the staff explain it to you. It is a must for any fermentation curious in Copenhagen, all the while the food is actually just very good, subtle and balanced, not just “funky”. Vegetarian and Sea small plates were just fantastic. The sake list and the manna wines on the drinks menu are such an experience as well.
Highly recommended for anyone seeking an original experience.
Amazing food, great service and really nice ambiance!!! A place to try :)
