02/12/2025: The name promises a lot – Applaus. And admittedly: there were several moments when I almost stood up and applauded. But like a piano where one key is slightly out of tune, a full ovation requires that all elements play cleanly. And they don’t (yet) quite do that at Applaus in Aalborg.
First of all: the facade still looks more like a tavern that serves the dish of the day and Tuborg Classic. It doesn’t promise what awaits inside – and that’s a shame, because inside the kitchen someone is actually working with precision and ambition. If Applaus wants to be a place that plays on the fine gastronomic keys, then the outside should also match the music.
We went all-in and had “FULDE APPLAUS” for 1,250 kr. – a full tour through the kitchen’s repertoire. It was varied, experimental and technically well-executed, but the food unfortunately didn’t quite reach the level where you sit in silent ecstasy. The final precision, the final “wow”, was missing. It was really good – but it wasn’t a masterpiece of dimensions. More of a shooting star than a Michelin star.
On the other hand, one of the waiters deserves a standing ovation and a driver’s license for the wine list. He delivered a solid, professional and charming effort. Unfortunately, he was backed up by two colleagues who seemed a bit like they had been cast on the same day. They stumbled over the menu, forgot a bit, fumbled with the dishes – and that pulled the experience in a more amateurish direction than the place really deserves.
There is an indecision in the experience. The place wants something big, but the decor and service don’t quite match the ambitions. There is nothing wrong with relaxed gastronomy – quite the opposite – but then it should be a style, not a compromise.
Applause is close to something big, but you leave with the feeling that the place is just about to find its last bit of self-confidence and coherence. It costs a lot of money – and then you expect the whole team to be ready for opening night.
Right now it's like hearing an otherwise great orchestra where the trumpeter hasn't read the notes.
A nice evening, good food, but for 1,250 kr. for "FULDE APPLAUS" you expect a little more than half a round of applause and a really good waiter.
