12/02/2026: Yes, paying more than 200kr. for a pizza seems a lot, but the sky high quality is unmatched by any other pizza reataurant in Copenhagen - or even in Denmark - and I've had a few (including Bæst, Fumo, Corsa, Luca, Dal Forno etc.).
11/02/2026: Surt is easily one of my favorite pizza spots in Copenhagen. Located in the heart of the historic Carlsberg district (right by the elephants), it offers a world-class experience that manages to be both cozy and incredibly high-quality.
The Magic of the Dough
The founder, Giuseppe Oliva (who helped start Bæst), is a true master. The name "Surt" means "sour" in Danish, referring to their 100% sourdough process with no industrial yeast. The result is a crust that is light, perfectly charred, and much easier to digest than your typical pizza. It’s exactly as good as the hype suggests.
The Ingredients & Authenticity
What makes Surt stand out is the blend of local organic produce and premium Italian imports.
• The Hindsholm Pizza: My absolute favorite. The pork sausage from the Hindsholm pigs is incredible, especially with the fermented chili. I’ve tried several others across many visits, and the quality never slips.
• Authentic Vibe: You can really feel the Italian roots here. Using ingredients sourced directly from Italy makes the flavors feel truly authentic, yet it fits perfectly into the modern, industrial vibe of Carlsberg Byen.
A Couple of "Local" Suggestions
• The Sharing Factor: I love the concept, but I wish they wouldn't "force" the sharing experience quite so much. Sometimes you just want all the pizzas brought to the table at the same time unless asked otherwise!
• Lunch Hours: Honestly, the only other negative is that they aren't open for lunch, why keep this goodness just for the evening? (Haha, but seriously!)
