Celebrating my mother’s 82nd birthday called for something truly extraordinary, so my wife and I returned to Kadeau Bornholm for the third time. Spoiler alert: somehow, it just keeps getting better.
Nestled on the rugged south coast of Bornholm in Sømarken, Kadeau is the absolute epitome of New Nordic dining. The atmosphere is sophisticated yet wonderfully relaxed, deeply connected to the island's terroir, and totally unpretentious.
The menu is a complete masterclass in local foraging, fermentation, and preservation. We kicked things off with an exquisite selection of greens and seafood, beautifully paired with a glass of Jacques Lassaigne 'Les Vignes de Montgueux' Champagne. Every single dish was a work of art served on bespoke ceramics. Highlights included a daring but perfectly balanced scallop toast with mirabelle and ants (which provided a brilliant, citrusy pop of acidity!), and a beautifully earthy, creamy dish served whimsically on a bed of rustic hay.
The progression of the meal was flawless. The dry-aged pork with jowl and heart was incredibly tender, bathed in a rich, glossy jus and elevated by the tartness of sloe berry and rowan shoots. And the desserts were on another level—from vibrant, fresh berries and cream, to a masterful, deep-hued blueberry tart, and finally, a breathtaking tart covered entirely in vibrant edible flower petals that tasted every bit as spectacular as it looked.
But what truly transforms a great meal into an unforgettable experience is the hospitality. Our Austrian waitress was the absolute star of the front-of-house. She was sweet, deeply knowledgeable about the intricate menu and wine pairings, and went out of her way to ensure my mother felt celebrated. Adding to the intimacy of the evening, the chefs frequently stepped out of the kitchen to present their creations directly to our table, passionately sharing details about their preparation and foraging techniques.
Kadeau Bornholm currently holds one Michelin star (alongside a well-deserved Green Star). However, in our humble opinion, this is unequivocally a two-Michelin-star experience housed within a one-star restaurant.
Flawless execution, a breathtaking coastal location, and warm, engaging service. We are already looking forward to visit number four! 🥂✨

Absolutely top class in Scandinavia in terms of food, wine, service and ambience. Has one star but could easily have had two. The food represents the season perfectly - what is served is what is in the garden for the day. The flavours are a perfect mix of subtle first courses and "in your face" smoked/raw fish or pork. The wines match the culinary journey excellently and the service is knowledgeable, pleasant and personal without being intrusive, and the environment is just the crowning glory - you won't find a more beautifully situated tavern, down on the beach on southern Bornholm.

After two visits within the last two years, I can only say that dining at this restaurant is an absolute must-do experience for any discerning gourmet.
During my visit in May 2024, I was able to fully absorb and enjoy the atmosphere, the service, and the style of the then Head Chef, Clotaire. It was a complete culinary journey, showcasing the island's produce in a very minimalist way.
On my first visit, there was only a minor drawback regarding the wine glasses.
However, they had clearly improved in this area by the time of my last visit in September 2025.
On my second visit, the menu seemed somewhat more restrained in both its structure and flavor profile. The desserts in 2024 were significantly more exciting.
The wine list impressed me greatly on both occasions. Being able to savor some "unicorns" from the Jura region—like those from Domaine Ganevat or Domaine Saint Pierre—on a small island in the Baltic Sea touched my heart.
The sommeliers were young and made me feel genuinely happy to be able to drink these wines.
I can only recommend this experience—this journey to an enchanting place—to every foodie. It was a trip filled with pure pleasure and pure beauty that I will never forget.
