absolutely delicious on top of being beautiful. I am personally (unfortunately) a big beef lover but these meals were so divine I didn’t even want to say yes to the option to add a meat or fish. things I have been a bit wary of in the past blew me away with their preparation. the wine pairings were perfect and the staff were all lovely and very knowledgeable. I will be reminiscing on this meal for years to come !

We were on holiday as a group of girls, we had a SPA party and a holiday in this wonderful hotel. We liked absolutely everything. In the evening we relaxed in the Spa area and the interior and sauna and pool are some of the best in Copenhagen. In the evening we went up to the rooftop bar restaurant and our surprise knew no bounds, the chef Caroline presented us with her dishes. Everything she brought us and recommended caused a storm of taste buds, I was surprised how you can cook pork like that, the pork was soft and juicy, the first time I try it. I definitely recommend visiting the rooftop restaurant, and our whole group sincerely thanks Karoline and the bar staff and we will come again more than once to enjoy these exquisite dishes.

Visited in March 2025. We had the 5 course menu, which actually has two small surprises as well, and the non-alcoholic pairing. The food was great and I was quite impressed with how the dishes were tasty without butter, and also without being too salty or acidic. Instead, they had umami and smoky flavours, which I am a big fan of. My favourite dish was probably the soup, but everything was nice enough and quite interesting. The drinks pairing was nice, with mild, but interesting flavours. I particularly liked the ginger beer and the iced coffee we got for dessert, but all juices were good. Service was quick, attentive, and professional. The restaurant itself is nice, with more space between tables than for most restaurants in Copenhagen, and with a nice view. The tall ceiling helps keep a good noise level. The only thing I didn't particularly like regarding the atmosphere was getting to the restaurant, because you have to pass through the hotel area to gr to the restaurant. But that's a very small inconvenience, and you get a nice view in return. Overall, I can recommend Ansvar - but only if you can keep an open mind and if you're interested in the sustainability concept.

Really good vegetarian food and good drinks. They go all-in with plates, cutlery and in general all interiors made from recycled materials. Very accomplished. The view is also fantastic. The food is very beautifully arranged and has clear references to noma's expression (although not quite at the level which is quite fair). One waiter didn't quite have a handle on the menu and seemed as if he had just arrived from a holiday without being briefed. But he was nice and friendly like all the staff. Also, absolutely brilliant dessert (and I'm not usually into sweet cuisine) A slight disappointment is that the wine list on the website does not match the one in the restaurant. I had chosen a wine from home, but they didn't have that and many others. So you might benefit from updating your website. Otherwise, a clear recommendation for an exciting vegetarian meal.
