Very nice; very good food: fresh white fish (= cod) with delicious vegetables and roasted potatoes, garnished with pea shoots (I love this herb...). As an "amuse-bouche," dark whole-grain crackers reminiscent of "Fincrisp," with a tasty dip. I thoroughly enjoyed being a guest there; the staff is incredibly friendly.

Fantastic restaurent. Beef filet was excellent, and the French fries wasnkne if the best I have ever tried.

Super friendly service and good food. Grilled green asparagus for the shooting star was a delicious touch. The burger was a bit boring - but nothing wrong with it.

Best fish and chips ever!! Tasty mayonnaise and top-notch tartar sauce. My dining companion, who is also an art and football enthusiast but also a lover of female beauty—grew up near Tienen so well-endowed, smoked through, and drunk through—had the best béarnaise ever!

I had a really exciting and good dining experience at Restaurant Valdemar in Kolding. For starters, I had gazpacho with hand-peeled shrimp and fresh salsa. The dish was wonderfully flavorful, fresh and very interesting. The flavors worked really well together, and it was a really good start to the menu. 8 out of 10. The main course was saltimbocca of Danish veal fillet with sage butter and air-dried ham, served with crispy polenta, baked tomatoes and arugula pesto. The dish tasted good, but it didn't impress me quite in the same way as the appetizer and dessert. 5.5 out of 10. The dessert was an airy elderflower cold dish with white chocolate, strawberries and Kammerjunker. It was without a doubt the best dish of the evening and absolutely perfect. The combination of flavors was fantastic, and the different taste experiences in the mouth were really beautiful and well-balanced. 10 out of 10. The service was also first-class. The staff was incredibly friendly, welcoming and helped make the evening a really good experience. Overall, it was a really good evening with exciting food, excellent service and a dessert I will never forget.

Dining on a Thursday evening, not terribly many guests, nice service, ordered their top menu, beef tenderloin, delicious hot and crispy fries, good Bearnaise sauce, lovely salad, really tender steak, unfortunately only lukewarm, the Zinfandel red wine went well with the food, it was just cold enough, 5 minutes on the radiator and it was good. Our overall impression, really good menu, just missing the last thing, then it would have been 5 stars, and it is easy to fix. Updated July 2026. An excellent evening, the boss himself served, and explained what the dishes contained, the drinks were carefully selected two special beers were carefully chosen according to the boss's suggestion, they were excellent, the wine was an Orange 2CV, not to be confused with the old Citroen, but a white wine, which has been stored with the skins a little longer, and thus the wine has changed color, a special taste, not bad, but different. Our food was Gordon bleu, not a bad choice at all, the restaurant's legendary veal fillet with fries, and similarly as tenderloin steak, it was top marks, when the fries were also golden crispy and soft inside, it must be said that the veal fillet was 5+ stars, and the tenderloin was only 5 stars, for dessert a cold dish, that's how it should be done. The serving and service 5+. The place has really understood what the customers want, no snobbery, but down to earth and with a good and humorous dialogue with the customers, it was a really good experience, and it must be tried again.

A truly elegant restaurant with excellent service and exquisite food. They have a house-brewed beer which I highly recommend. Thank you, it was great.

Great food, great service and great atmosphere are probably the 3 words that sum up Valdemar best, whether you are having lunch with your family or on a date with the wife, this place is perfect
