13/07/2025: My wife and I often eat at Sletten. It’s a beautiful location, right on the harbor, with an outdoor terrace when the weather permits.
The food is usually great, but as I’ve written in previous reviews, they seem to have quality and consistency issues from time to time. The most recent instance was yesterday, though we also noticed a hint of it about a week or two ago when we had lunch there.
At lunch, the issue was the salt level in two of the three dishes I had — it was way too high. The only dish that wasn’t overly salty was the tartare.
At our dinner yesterday, it was again the salt level in two out of the three dishes I had; once again, the tartare was the exception. I suspect they have a chef or cook who either smokes, doesn’t taste the food they prepare, or simply has a very unhealthy relationship with salt. (I understand some believe in pushing salt to the limit, but this was far beyond that.)
Secondly, my wife and I both ordered the venison (buck), and right from the start, anyone with basic culinary training knows that you never send out two different-sized portions of meat to the same table. Everyone knows this. Guests will look at each other and wonder why their neighbor got a much larger piece — which is exactly what happened with us. Her piece was roughly half the size of mine.
Even worse, those two pieces of meat should never have left the kitchen — they were undercooked (practically raw) and extremely tough. I left half of mine on the plate and complained. Another person at our table received the same dish a few minutes later, and they were served multiple pieces of perfectly cooked, super tender meat. So it’s clear that someone knowingly pushed out two substandard plates, which is incredibly disappointing in a restaurant of this caliber.
To their credit, they removed the dishes from the bill due to my complaint — but honestly, I’d much rather have had a tender steak than a discount.
It’s extremely important that quality and consistency are always maintained. At the prices Sletten charges, they attract a certain type of customer who expects the best — and who will gladly take their business elsewhere if disappointed. Once that happens, it becomes very difficult to regain their trust.
If we can’t rely on the restaurant to deliver a great experience every time, we simply can’t bring friends or business acquaintances there — it would be too embarrassing to promise great food and then not deliver on that promise.
As I mentioned, I’ve written about similar issues at Sletten in the past, and I genuinely hope they get everything straightened out. We really enjoy coming there, and the service is always excellent.
