I went here a few weeks ago with my partner. We visited from the United States, and I kept seeing this restaurant pop up when searching for great restaurants in Copenhagen. Vaekst was, by far, the best restaurant I've ever been to in my entire life. We ordered the appetizer, 2 entrees, a dessert, and the wine pairing. Our server was personable and elevated the dining experience. Vaekst is a dinner that you simply cannot miss.

Standout dishes included a perfectly cooked cod with a subtle but tangy buttermilk sauce, and a carrot tartare that was so vibrant, it almost felt like a garden on the plate. The wine pairing was another highlight. Each glass was carefully selected to complement the complex flavors of the dishes without overwhelming them. The staff was knowledgeable, attentive, and clearly passionate about their craft, adding a personal touch to the entire experience. Went here for a 3 course meal with wine pairing. All dishes was amazing and easily replaced for vegetarian options or swap the main dish for steak. Lovely wine and staff was very attentive and helpful. Highly recommend.

Super positively surprised by both price and quality. Had expected the 3 dishes to be perhaps just on the low end, but it turned out to be excellent and a perfectly ok amount, there were 2 surprises that were not mentioned. Will definitely come again!

We celebrated our wedding there. It was absolute class! The food was super tasty, the waiters were super friendly and patient, the atmosphere was very cozy, our guests were super satisfied! Top quality and so much enjoyment... for both the eyes and the stomach ☺️

We had previously visited Vaekst and we're excited to return during our July 2024 trip. Unfortunately, our experience his time was sub-par. Much of this revolver around service. Our server was absent-minded and seemingly clueless. Shortly after our arrival she dumped an entree over the customer next to us. We then waited 20+ minutes to be acknowledged after sitting, and were then only acknowledged by her colleague, who happened to notice she was ignoring us. She took our order like it was a fast food restaurant ("do you know what you want?") and wines and dishes were served with no refinement, despite the restaurant's reputation and price point. We asked for our check after the meal. Receiving it took another 20 minutes as we watched our server stand at the station next to the kitchen, having a conversation with her colleague, ignoring us and the tables around us. The food was fine. Not remarkable but passable. However, good food can be found all over Copenhagen and this was certainly no more special than many other places in Copenhagen with far superior service.

Netter Empfang, tolles Personal und das Essen war auch sehr gut wenn auch die Portionen recht klein waren. Sicher eines der besseren Lokale in Kopenhagen.
