By far the best restaurant experience of my life. The food was absolutely insanely good with a good mix of experimental combinations and more classic dishes. The setting and atmosphere were also impeccable, but where you deserve 10 stars is in the service level. Absolutely outstanding! Everyone - and there were many - who served us was skilled, knowledgeable, down to earth and clearly passionate. The same applied to Rasmus and Søren, who were both past the table, which was super cool - down to earth and passionate; like everyone else. Furthermore, it was really cool to experience that the only thing it was about was giving us the best possible experience - which we got to that extent.
An extra shot and praise to the two waiters who were at our table the most. A young, Danish student waiter and a South African waiter. Service on an unprecedented level! We say thank you very much - and will definitely come again!
16/11/2025: If Noma is the industry’s wild card, then Geranium is undoubtedly its straight-A student — precise, composed, and consistently brilliant. Its founder remains the only chef in the world to hold the full Bocuse d’Or trilogy — gold, silver, and bronze — a detail that feels evident in every plate: methodical technique, balanced creativity, and immaculate execution.
Flavours are diverse without ever feeling forced; the aesthetics are impeccable; and the non-alcoholic pairing elevates the experience to a standard that many Michelin-starred restaurants have yet to reach.
After working through Copenhagen’s most celebrated dining rooms, this is, without question, my definition of a true three-star meal.

A visually striking opening. Seaweed saltiness meets herring umami, brightened by a clean herbal lift from dill.
Smoked Roe ⭐️⭐️⭐️⭐️⭐️
Crisp yet tender with a delicate smokiness; the finish lands on a gentle dairy sweetness and the subtle pop of cured roe.
Boiled Beetroot ⭐️⭐️⭐️⭐️⭐️
Devoid of any earthiness — pure sweetness with cherry-like fruitiness, followed by a whisper of fresh horseradish.
Caviar ⭐️⭐️⭐️⭐️
Pleasant but optional. Well-made, though not a standout in this context.
Oysters ⭐️⭐️⭐️⭐️⭐️
Warm, plump oysters finished over heat; paired with pickled celeriac for a harmonious sweet–sour counterpoint.

Crisp kohlrabi and apple acidity layered with a creamy sauce and saline depth from caviar — full and satisfying.
Sunchoke ⭐️⭐️⭐️⭐️
Nutty, soft and savoury, with raw walnut providing an unexpected textural contrast.

Black-truffle bread is rich and aromatic; the sourdough crust is gentle, with a lingering nutty fragrance.

Soft and bouncy. The sauce brings fish and mushroom umami, though the seasoning leans slightly heavy.

Acidic, sweet, smoky, creamy, crisp, soft — a beautifully orchestrated study of vegetables.
A far more layered experience than Arpège’s vegetable tasting.
Chamomile ⭐️⭐️⭐️⭐️⭐️
Bright and fragrant with citrus–botanical notes; pear sweetness rounds out the acidity elegantly.
Chocolate ⭐️⭐️⭐️⭐️⭐️
A perfect finale: aromatic chocolate sphere; silky mousse with nutty granules; a tiny bar reminiscent of Magnum.
Flavours of Madagascar cacao emerge with light acidity and cherry-like fruit tones.
Sunflower Seeds Tart ⭐️⭐️⭐️⭐️
Apple sweetness, crisp tart shell, geranium perfume, and cultured yoghurt — refreshing and poised.

19/11/2025: One of my favorite restaurants on the entire planet, and still firmly entrenched in my Top Five. They create a serene and flawless experience. Every dish is thoughtful and unique, with no fillers. Lovely people working both front and back. I will hopefully be back this summer to either this location or its sister in Bornholm.
16/11/2025: Choosing Kadeau as the final stop of my Copenhagen trip felt natural — it’s a name that keeps coming up in local recommendations, especially among friends who love Nordic cuisine.
Born on a small island with limited produce, the restaurant developed a language of preservation: dried, fermented, cured, salted.
Every dish carries a quiet narrative of “time” — how flavour deepens, concentrates, transforms.
Service is attentive for the most part, though the tea ritual was oddly inconsistent: 20 minutes to refill a tiny cup, and never following through beyond the first pour. At that point, placing the pot on the table might have been kinder.
Tomatoes ⭐️⭐️⭐️⭐️
Sun-dried or dehydrated to intensify the natural sweetness — almost like tomato paste — magnifying both acidity and fruitiness.
Razor Clam ⭐️⭐️⭐️⭐️
Layered textures with a crisp–springy bite; rounded by warm butter aromatics.
Scallop ⭐️⭐️⭐️⭐️⭐️
Tart–sweet profile accented with ants; a contrast of crunch and soft sweetness that opens beautifully on the palate.

The briny richness of crab and caviar lifted by almond aroma and pickled acidity — refined and well-balanced.

The service was excellent, the knowledge of the products and recommendations for drinks were spot on. We had a lovely evening at their terrace outside.

18/10/2025: After another beautiful day in the Danish sun, we decided to visit the small town of Ringkøbing and enjoy a five-course meal at the "Nordic" restaurant. The "Nordic" is centrally located on the market square, features stylish, minimalist decor (brick walls, lots of gray, black, and white), and bills itself as a fine-dining restaurant without a star, but with a Michelin mention. The service: exclusively tall, blonde Danish women – charming, friendly, but a bit "shirtsleeves" in the details – the table wasn't wiped despite spills, new cutlery sets were unclear, and drinks were rarely requested. Not a big deal – but worth mentioning in a fine-dining context.
The cuisine follows three mottos: seasonal ingredients, hospitality, and matching drinks. The latter was interpreted rather loosely ("Fanta also somehow goes well with the food"), but nonetheless: the house-brewed beer was a hit – fresh, well-rounded, and very drinkable. We skipped the wine menu (price issue), but both opted for the five-course menu for €80, which is a real bargain for Denmark.
And the food? Simply put: surprisingly delicious, honest, well-thought-out, no gimmicks, just perfectly cooked dishes with bold flavors.
Course 1: A soup of "Ingrid's peas" with mussels, chives, and a piece of haddock cooked in lardo – wonderfully aromatic, well-rounded, and a great start. The whole thing was topped off with incredibly delicious, freshly baked bread with salted butter – I could have eaten nothing but that all evening.
Course 2: Mackerel in a buttermilk sauce with parsley oil and roasted hazelnuts – meaty, slightly tart, with a lovely texture. The advertised horseradish, however, was nowhere to be found.
Course 3: A magnificent scallop with smoked butter sauce, sweet and sour pickled pumpkin, and deep-fried kale – bold flavors, skillfully combined.
Main Course (Variation 1): Beef tenderloin, cooked perfectly medium, with a crispy croquette, parsley puree, trumpet mushrooms, and Madeira sauce – classic, good, perhaps a little more bite in the croquette would have been desirable.
Main Course (Variation 2): Pan-fried fish with squid and a white sauce – also excellent, especially the squid: crispy on the outside, tender and salty on the inside.
Dessert: Quince, apple, ginger, and "Ivory" – a fine white chocolate in the shape of a sorbet-like ball, accompanied by another ball of quince, all in a sweet and sour apple cider sauce. Sounds good, and was delicious, but I felt it was missing something: perhaps more depth of chocolate, a bit of crunch, a fresh lemon note, or just a touch of cream.
We concluded the evening with a good cappuccino in a beautiful cup and the realization: This meal was harmonious all around, flavorful, and delightfully filling – something you don't always experience in fine dining. The cuisine could be bolder in some places, dare to use a bit more contrast, add a spiciness or playfulness – but honestly: I already love this place. A must-visit on any trip to Denmark.

01/11/2025: Everything here is just perfect. I had my first date with my boyfriend here in Oct 2024 and we were going to celebrate by eating here again on the same day in 2025. We came very late and were allowed to sit until a little past closing time and you just have to know that we really appreciate it ❤️. We definitely plan to eat here every year on that day.
29/10/2025: I have ordered items from there three times through Wolt two of the times they were rejected and no explanation why the third time. I ordered from there I got my items half an hour late and the pork roast and the other was so dry it was inedible not a restaurant I will buy from again
